Another one of my favorite healthy comfort meals is this recipe for sweet potato soup. Rich, creamy, and scrumptious, this dish originates from vegetables, coconut milk, and spices.
Together with Jack, I had bowl after bowl of delicious sweet potato soup during the first week of the autumn season. It is not clear to me what it is about creamy orange soup, but for some reason, it appears to be the ideal meal to have on a day when the temperature is low. The majority of the time, when autumn arrives, I prepare my butternut squash soup or pumpkin soup on a regular basis; but, at the moment, I can’t get enough of my sweet potato soup anymore. It has a taste that is smokey, sweet, and rich, and it is finished off with a tangy flavor that comes from apple cider vinegar. The consistency is exceptional in that it is silky smooth and creamy, which gives the impression that a single bowl has a lot of substance.
