A Guide to Making Soup with Cauliflower

Roast, simmer, and mix are the three simple processes that I like to think of when I think of this recipe for cauliflower soup.

Begin by roasting the vegetables. The cauliflower should be cut into florets, and the cores should be chopped up. Start by peeling and chopping the shallots. Garlic cloves that have not been peeled, a sprinkle of olive oil, and a pinch each of salt and pepper should be wrapped in a piece of aluminum foil.

Do you not own shallots? A half of a yellow onion, chopped, should be used in their place. You should use the onions in the same way that you would use the shallot; put them to the foil along with the onions.
